Thanks for checking out my blog, it is currently a work in progress but I hope you will enjoy the content and become inspired to cook deliciously healthy food. A little over a year and a half ago, I came down with a mysterious stomach illness that left me laying in bed, eating crackers and gatorade, and taking a ton of medications. Colonoscopy, endoscopy, capsule endoscopy, and multiple other procedures later my doctors couldn’t even pinpoint why my stomach was still in intense pain.
Since I was barely eating and lost 15+ pounds, I decided to take matters into my own hand and researched various diets and decided to give a grain free/paleo diet a try. I was determined to eat nutritious foods and lessen my stomach pain and for the first time after 3 months of eating strict paleo, I was able to eat without intense pain! Over a year and a half later, I have been able to re-introduce mostly everything into my diet, my stomach feels great, and I have lost over 40 pounds!
I want to encourage those facing illness or wanting to improve their health that you can cook nutritious, homemade meals, even if you work full-time and have a very limited budget.
